You have the best oppotunities, education and reference to experiment and to pass your knowlegde on to us the comsumers. If you don't go with your heart I think the industry would be at a standstill. In many ways, I appreciate this as much as the other taste components. I want that bold kick and when that is watered down, I just end up disappointed. All the time I thought it's kind of like the TCC blend, but with floral notes instead of fruity ones. And I was right:-) I think you made the right choice. I prefer to see someone rave about a product they truly have poured their heart into instead of pushing what the customer might like!<br />Thanks for the tip of using the cupping method as a reference point for the french press. We (the industry professionals) don't wanna sit on top of this mountain out of reach with the consumers, but I firmly believe that consumers appreciate the same things as us. I'm glad to hear that you stuck to your guns (or strengths) with the new blend.
